  • ... if the dough piece is brought into the shop
  • ... in which outlet the product is baked
  • ... if Mrs. Smith or Mrs. Miller bakes the products
  • ... if it is Monday, Tuesday,... or Saturday.

"The bread roll production for the next day is going on. The dough preparation is done. The moulded dough pieces are taken from the bread roll line and are put onto trays which can be turned around. The trays are perforated all around and they are stored in a special RollTainer for dough pieces. The unbaked products are ready for the next day and have to be chilled quickly down to approx. 3°C in order to stop the proofing process."

 

 

 

"The filled trays on the RollTainer are brought into the chilling room. Due to the fact that the RollTainer is completely open on two sides, the cold air can directly reach the trays. The fact that the trays are perforated all around, makes sure that the cold air reaches all unbaked products as quickly as possible."

 

 

 

 

 

 

"All fresh products have been commissioned. The only thing the drivers still need are the products for the single outlets. The RollTainer with the unbaked products is wheeled out of the chilling room. It is important now to keep the coldness as long as possible. On a so-called cover holder there are synthetic covers which are now hinged into the RollTainer and which are closed with the help of Velcro Fasteners for a safe and protected transport of the products. This keeps the coldness inside and avoids the creation of skin on the unbaked products."

 

 

"The first badge of dough pieces is ready for baking. The dough pieces are turned onto trays. The empty transport tray is put back into the RollTainer. With the next delivery the complete empty RollTainer with the transport trays is taken back to the production site. The covers will be removed there. The air circulation which is now possible will dry the covers on the transport trays. This reduces mold stains. The traysand the RollTainer will be ready for use again the nextmorning."
