The WendeMeister is a novelty. It was our aim to further rationalize the process of turning dough pieces.
In the meantime WendeMeister facilitates the work in many German bakeries already. |

The dough pieces are placed on the proofing trays and positioned on the proofing rack. Then - before baking - the perforated baking trays are placed on top. For turning the rack is moved into the WendeMeister. A pneumatic system lifts the bottom frame, locks the proofing rack and lowers the bottom frame again. The proofing rack is now hanging freely and can be turned without any problems. |

The dough pieces fall onto the trays. The trays with the dough pieces can be taken out for baking. The proofing moulds remain untouched inside the proofing rack. The proofing rack is turned again and can be filled again.
